My first batch was flat. I searched online and found a video that shows how to form the rolls and place them on the pan. I love love love their technique for forming the rolls. I made Lion House Rolls!!!&lt;br /&gt;&lt;br /&gt;Here's the recipe:&lt;br /&gt;&lt;br /&gt;&lt;div align="left"&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="font-size:130%;"&gt;Lion House Rolls&lt;br /&gt;&lt;/span&gt;&lt;/strong&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;* 2 cups warm water (110-115 degrees)&lt;br /&gt;* 2/3 cup nonfat dry milk (instant)&lt;br /&gt;* 2 Tb. dry yeast&lt;br /&gt;* 1/4 cup sugar&lt;br /&gt;* 2 tsp. salt&lt;br /&gt;* 1/3 cup shortening (butter or margarine)&lt;br /&gt;* 1 egg&lt;br /&gt;* 5-5 1/2 cups flour, all purpose (bread flour can be used if you have it on hand)&lt;br /&gt;&lt;br /&gt;Method:&lt;br /&gt;&lt;br /&gt;In the large bowl of an electric mixer, combine the water and the milk powder and stir so the milk dissolves. Add the yeast to tthis mixture then the sugar, salt, shortening, egg and 2 cups of the flour. Mix on low speed of mixer until ingredients are wet, then turn to medium speed and mix for 2 minutes. Stop the mixer and add 2 more cups of flour then mix on low speed until the ingredients are wet, then turn mixer on medium speed and mix for 2 minutes. The dough will be getting stiff and you may need to remove the bowl from the mixer and mix in the remaining flour by hand. Add approximately 1/2 cup of flour and mix again. (This can be done by hand or mixer). The dough should be soft, not overly sticky, and not stiff. (It is not necessary to use the entire amount of flour). Scrape the dough off the sides of the bowl and pour approximately on tablespoon of vegetable oil all around the sides of the bowl. Turn the dough over in the bowl so it is covered with the oil. (This helps prevent the dough from drying out.) Cover with plastic and allow to rise in a warm place until double in size. Sprinkle a cutting board or counter with flour and put the dough on the flour. It is now ready to roll out and cut into desired shape and size of rolls. Place on greased (or parchment lined) baking pans. Let rise in a warm place until the rolls are double in size (approx. 1-1 1/2 hours). Bake in a 375-degree oven for 15-20 minutes or until they are browned to your satisfaction. Brush with melted butter while hout. She made the best Chex Mix, pretended to be astounded when I showed her I could play "Birdy Birdy Where is your Nest?" on the piano, took us to the Ice Cream Parlor on our birthday, ... the list goes on and on. What a neat lady. My favorite memories with Mrs. Stetson are of dying Easter Eggs. Now, when I dye eggs with my kids, I always think of that very special preschool teacher.&lt;br /&gt;&lt;br /&gt;Here are a couple pictures from this year's egg dying extravaganza. Matt had to work on a book report, and Josh is too cool for egg dying. He said it's a fast race - gentle downhill slope a lot of the way. Bryan and I decided to give it a shot (our first race ever). We followed a 12-week training plan we found online. We did short runs 2 days a week, cross-trained 2 days a week, and did a long run on Saturday mornings. Each week, the short runs and long runs got progressively longer. I have to say, I loved the training. I never thought I would/could run 10 miles just for the fun of it. But I did, and I loved the challenge. Bryan was always faster than me, though. That kind of ticked me off. :)  &lt;br /&gt;&lt;br /&gt;Today was race day! We got up at 4:30 AM, drove to Mapleton, and the 1200 runners were bussed up Hobble Creek Canyon to the start line. It's true, &lt;span style="font-weight:bold;"&gt;it was&lt;span style="font-style:italic;"&gt;&lt;/span&gt;&lt;/span&gt; a fast race. I ran faster than my training pace. Unfortunately, Bryan donated blood earlier this week, so his lack of red blood cells hurt his speed. Even so, he ran at his training pace. My favorite part was seeing my cute kids at the finish line. So did her cousin Kathryn. My sister and I have consequently joked that you need to be careful when naming a child Kathryn. Last night, we took the kids swimming at the community pool. As soon as Kate got in the water, she found a new friend. Her friend's name is Kate. It turns out, this new Kate is also 3 1/2. Her birthday is 2 days after our Kate. And this new Kate is also bossy. She and Kate had a great time bossing each other around. As the new Kate was leaving with her family, she says to me, "What's your phone number?" Her mom was shocked. I wasn't. After all, it's something my Kate would have said!&lt;br /&gt;&lt;br /&gt;Swimming: Kate is fearless. She can't swim yet, but she spends most of the time with her head underwater. It's a little stressful for the lifeguards. Joey can swim, and happily goes around doing his own thing. He went off the diving board a few times. Matt and Josh spent the whole time going off the diving board and the high-dive. They both did flips off the high-dive, and ended up over-rotating. It starts in late August. I want them to start practicing now, so they'll be better prepared for tryouts. The problem is, these two fine boys CANNOT play catch without getting into an arguement almost instantaneously. It drives me nuts! So I came up with a plan. It's not a perfect plan, but it will have to do...until I can come up with a better plan. I offered to play catch with them. Every time they catch the ball, they earn 5 cents. Every time they drop the ball, they lose 5 cents. And we play to $1. They were a little surprised that I knew how to throw a ball. :)&lt;br /&gt;Two days of this, and I already see improvement. One of the boys got down to negative 40 cents the first day. He ended up only earning 35 cents. He didn't go negative at all today, and they both earned $1. This week, we are dealing with hay fever and ... stitches!&lt;br /&gt;&lt;br /&gt;On Tuesday, I had to be at scouts at the same time as Josh's baseball game. Grandma Jodi and Grandpa Vern are in town visiting, so Bryan and the grandparents took the kids to the game. I got a call from Bryan saying Kate needed stitches. Matt had been off by himself practicing is batting swing. Kate came up behind him without him noticing, and the bat hit her in the eye. When I met Bryan at the Instacare, Kate was in good spirits, eating a lollipop and talking non-stop. She listened to the Dr, nodding her head and being very polite. When it was time to stitch her up, they wrapped her in a blanket to keep her arms down. A nurse held her head still. Kate got so comfy, she fell asleep! The Dr was very impressed with his model patient. It was the same Dr that stitched up Matt after his &lt;a href="http://our-organized-chaos.blogspot.com/2009_01_01_archive.html"&gt;sledding accident&lt;/a&gt;. We are getting quite a reputation at the Instacare. Kate ended up with 4 stitches above her right eye.&lt;br /&gt;&lt;br /&gt;The next morning, Kate woke up with one eye puffy from the stitches, and the other eye glued shut because of hay fever. It was pretty funny (but not to her). It was hilarious. Kate was wandering around chatting with people the whole time. Little busy-body. Tatum was much more serious about doing the things she was supposed to be doing. But she kept on messing up when Julie would tell her to smile. For his science project, he has to classify 10 different bugs and 10 different leaves. For about a week now, everyone's been helping him catch bugs. Usually we can see them about a mile away in the hills, but sometimes they get closer. Today we could see them from the road leading into our neighborhood. As a result, I don't ask anyone else to do them. I know, I need to let the kids do the dishes once in awhile so they learn how to do them. I finally figured out how to get the videos off the camcorder and into a format that works. At least, I think it works. You'll have to let me know.&lt;br /&gt;&lt;br /&gt;Joey memorized a poem for the Storytelling Festival at his school. He was one of 4 Kindergarteners who told their poem for the K-3 grades at an assembly earlier this week. And he won first place for the Kindergarten age group! &lt;br /&gt;&lt;br /&gt;Today they had a special little story telling time where any Kindergarteners who wanted to could say their poems. We filmed Joey doing his poem. Very easy to do, and the snowflakes look oh-so-professional! After the party, Kate wanted it to snow in her room. So now some of the snowflakes are hanging from her curtain rod. While I was gone, Matt and Joey went sledding at the park by our house.  They were sledding with a couple other kids, and a neighbor mom, Marcia, was there watching.  She was going to leave, but her son asked her to stay just a little longer to watch the sledding.  I'm so grateful she stayed.  Matt sledded down the hill and tried to go under the metal park bench.  His head hit the back of the bench.  Huge head wound.  Marcia yelled for the younger kids to go get help while she held a snow hat to Matt's wound.  Bryan was home, and he took Matt to the Instacare.  Matt ended up with stitches both below the surface and on the surface.  He is lucky to be alive.  He took a Tylenol with Codeine that night, and a regular Tylenol the next morning...and that's it!  He has felt no pain.  I have him doing indoor recess this week.  I am sure if he was outside with his friends, he would forget about the head issue and run around like a wild man.  Poor kid.&lt;br /&gt;&lt;br /&gt;A nice neighbor covered up the bloody snow at the park before I got a chance to do it.  However, a few days later enough snow had melted so I could see the blood.  It was everywhere.  I am so grateful that Matt is okay.  I am so grateful that Marcia was there to help.  It could have been so much worse. Can I just say it is close to impossible for Matt to take it easy?  We had to buzz his head, so his hair wouldn't get in the wound.  The only problem is that the wound is SO obvious with a bald head. It was the window right by where Josh was doing his homework, so he was annoyed.  And any opportunity to tattle on Matt is fun for Josh.  So I opened the front door and yelled for Matt to knock it off.  Then I hear "I'm stuck!"  I peeked outside, and all I see is the top half of Matt.  The bottom half is in the snow.  Do I run to help him?  Oh no, I run to find the camera.  I got the camera, got my snow boots on, and went out to see Matt. Well, I actually had some help finishing it (thanks Jess and Jodi).  Kate has been VERY attached to froggie blankie.  A couple weeks ago, froggie blankie went missing.  This is very strange, because there really aren't many places it could hide.  But I couldn't find it anywhere.  I was secretly happy, because the poor blanket was getting really tattered and faded.  And I secretly hoped I could find it first, so I could "accidentally" throw it away.  Kind of like I'm sure my dad "accidentally" threw away my bikini as a teenager.  It took a few days, but Kate eventually stopped asking for her favorite blanket.  Bryan and I went to the store tonight, and left the kids instructions to clean up the basement.  When we got home, Kate was standing at the door, hugging her favorite froggie blankie.  NOOOOO!!!!!  The kids had found it in the Christmas Tree box in the basement.  I had to act fast, so the previous blankie attachment would not reattach. Even Joey, who doesn't like chocolate (he got that from me, I guess), slurped it down.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.flickr.com/photos/30508068@N05/3102797195/" title="DSC02994 by our organized chaos, on Flickr"&gt;&lt;img src="http://farm4.static.flickr.com/3256/3102797195_2ae77748ab.jpg" alt="DSC02994" width="500" height="423" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;While they were sledding, I whipped up a batch of our family favorite: chicken noodle soup.  I love two things about this recipe.  1) it's so easy to make, and hard to mess up; and 2) everyone loves it!&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.flickr.com/photos/30508068@N05/3102797349/" title="DSC03001 by our organized chaos, on Flickr"&gt;&lt;img src="http://farm4.static.flickr.com/3065/3102797349_b76f5d5d10.jpg" alt="DSC03001" width="500" height="415" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;The recipe was originally based on the Chicken Vegetable Soup recipe found in the Better Homes and Gardens New Cook Book.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Chicken Noodle Soup - Christensen Style&lt;/span&gt;&lt;br /&gt;3 1/2 qts chicken broth (or 3 1/2 qts water and 5 chicken bullion cubes)&lt;br /&gt;1/2 cup onion&lt;br /&gt;1/2 tsp garlic&lt;br /&gt;1/2 tsp dried crushed oregano (I use whatever spices I have on hand, and I'm not exact with the measurements)&lt;br /&gt;1/2 tsp dried crushed basil&lt;br /&gt;1/2 lb fresh or frozen sliced carrots&lt;br /&gt;1 bay leaf&lt;br /&gt;salt&lt;br /&gt;pepper&lt;br /&gt;1 lb chicken&lt;br /&gt;5-6 handfuls dry noodles&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;In a large pot:&lt;/span&gt; combine water, bullion cubes, onion, garlic, spices, carrots.  Add a few shakes of salt and pepper.  Add bay leaf.  Bring to boil.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;In a medium pot:&lt;/span&gt; fill 2/3 full with water, add some salt and pepper, add the chicken, and bring to boil.  Let the chicken boil while the soup is cooking.&lt;br /&gt;&lt;br /&gt;Be sure to watch both pots, or they will boil over.&lt;br /&gt;&lt;br /&gt;Fast method: Once the large pot is boiling, add the dry noodles.  Cook according to the noodle package directions.&lt;br /&gt;&lt;br /&gt;Longer method: If you have extra time, let the large pot boil for 15 minutes or so before adding the noodles.  Then add the dry noodles.  Cook according to the noodle package directions.&lt;br /&gt;&lt;br /&gt;Once noodles are cooked, remove chicken from medium pot, chop up, and add to the soup.  Salt and pepper to taste, and you're done!&lt;br /&gt;&lt;br /&gt;Additional note: The water the chicken cooked in is a good chicken broth now.  I usually strain some of it and add it to the soup at the end.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;&lt;/span&gt;The noodles I use are the &lt;span style="font-weight: bold;"&gt;Country Pasta Homemade Style Egg Pasta&lt;/span&gt;. She has a plastic Precious Moments one (gma Jodi gave it to us when Josh was little) that she plays with all of the time.  My Willow Tree nativity is on the entry table.  Kate can't help herself.  She is constantly moving the pieces around.  Here's a picture of her playing with the Willow Tree nativity.  She added some black chess pieces, because I guess they needed to be part of the nativity too. I realized that Kate looks so cute and well-behaved in this picture.  On the Sunday this picture was taken, I wasn't feeling well, so I was going to stay home from church.  A few minutes after this picture was taken, it was time for everyone to go to church.  Kate threw a &lt;span style="font-weight: bold; font-style: italic;"&gt;major, monumental&lt;/span&gt; tantrum about something and had to stay home from church with me.  She was &lt;span style="font-style: italic;"&gt;not&lt;/span&gt; happy about that. I did buy the class picture, just not the individual ones. Instead, I wanted to get some individual and family pictures taken outside with the fall colors. Well, that didn't happen. By the time I got around to taking the pictures, the fall colors were almost gone. But the field grass was still really pretty. Julie and crew met up with us, and we took a bunch of pictures. As the weather gets colder, I'm really doing my best to keep a good attitude. So I decided to share some of my favorite things about autumn:&lt;br /&gt;&lt;br /&gt;1. Pumpkin Bars. My friend Carrie got me hooked on pumpkin bars many many years ago. In turn, I've gotten a lot of people hooked on them too! The recipe is super-easy and highly addictive.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://farm4.static.flickr.com/3161/2938521773_20e651407b.jpg"&gt;&lt;img style="MARGIN: 0px 0px 10px 10px; WIDTH: 320px; CURSOR: hand; align: center" alt="" src="http://farm4.static.flickr.com/3161/2938521773_20e651407b.jpg" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;u&gt;Pumpkin Bars:&lt;/u&gt;&lt;br /&gt;2 cups flour&lt;br /&gt;2 cups sugar&lt;br /&gt;2 tsp baking powder&lt;br /&gt;1 tsp baking soda&lt;br /&gt;1 tsp cinnamon&lt;br /&gt;1 tsp nutmeg&lt;br /&gt;1/2 tsp salt&lt;br /&gt;1/2 tsp cloves&lt;br /&gt;1 cup oil (can subst. applesauce)&lt;br /&gt;15 oz can pumpkin&lt;br /&gt;4 eggs&lt;br /&gt;&lt;br /&gt;Mix everything together. Pour into greased jelly roll pan (a deep cookie sheet).&lt;br /&gt;Bake at 350 for 20 minutes or until golden brown. Cool.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;Frosting&lt;/u&gt;&lt;br /&gt;2 cups powdered sugar&lt;br /&gt;1/3 cup margarine&lt;br /&gt;3 oz cream cheese&lt;br /&gt;1 Tbs milk&lt;br /&gt;1 Tbs vanilla&lt;br /&gt;&lt;br /&gt;Spread frosting on cooled pumpking bars.&lt;br /&gt;&lt;br /&gt;2. &lt;a href="http://www.scentsy.com/scentsalicious"&gt;Scentsy Wickless Candles&lt;/a&gt;. My friend Julie got me hooked on Scentsy. I love the fact that it's wickless, and it's really easy to change out scents. I enjoy my Scentsy candle warmer (the Zensy) all year long. Havana Cabana is my favorite summer scent. I've just switched to more fall-type scents like Pumpkin Roll and Clove &amp;amp; Cinnamon.&lt;br /&gt;&lt;br /&gt;****&lt;br /&gt;&lt;p&gt;OK, I'm in trouble. Those are the only 2 things I could come up with! I'll keep thinking. &lt;/p&gt;&lt;p&gt;(2 days later) I thought of one more:&lt;/p&gt;&lt;p&gt;3. All of the grasses that were causing my allergies are dying, so after 3 weeks my ears are finally unplugged! Sure enough, seasonal allergies are the cause.  Matt also had an ear infection. Friday, Kate's week-old bee sting on her toe started swelling up again.  By the end of the day, her foot was swollen so bad that we couldn't get shoes on.  &lt;br /&gt;&lt;br /&gt;Murphy's law:  Part A. If you take the kids to the Dr, the one you didn't take will need to be taken in the next day for something. Part B. Usually it is 4:30 on a Friday when you decide you HAVE to take your child in to the Dr.  Thank goodness for doctors who have After Hours clinics! &lt;br /&gt;&lt;br /&gt;P.S. Kate's bee sting got infected. I'm sure they'll recover. We went to California for a week. It was THE BEST vacation. The cousins always have fun together, and this was my first time meeting baby William in person.
